Taiwanese Water Fairy:

Taiwanese Water Fairy (or Shui Xian) is a roasted oolong from Ming Jian, Nantou County. Water Fairy is traditionally produced in China’s Wuyi Mountain area. This Taiwanese-grown version shares many flavor characteristics with Wuyi Oolong, including its smoky, fired flavor and notes of chocolate and fig. Taiwanese Water Fairy is made from the Sijichun (Four Seasons) cultivar, which lends a smoothness to the brew.
