Bing Dao Ice Island Tea Cake is a shou puer grown near Lincang in southwestern Yunnan Province. This famous tea-growing region sits at least 1400 meters above sea level. Bing Dao means “Ice Island.” The tea can be described as having a “hui gan” quality, which is a combination of flavor and sensation. There is a sweetness that arrives after bitterness, along with a pleasant, cooling feeling on the tongue. This cake is also considered “gushu,” or coming from ancient trees. Gushu teas are also said to age particularly well.
