Oolong
A much loved category of ‘rolled teas’, oolongs range in flavor from light and green to strong and toasty depending on how they are made. The rolling process can be conducted in different ways. ‘Ball rolling’ involves wrapping a large bunch of leaves in a cloth and then binding the cloth tightly into a ball shape. Other oolongs are gently twisted using a ‘sideways rolling’ method.
