About This Product
Pine Smoked Black (Lapsang Souchong) is a classic black tea that originated in Tongmu village in the Wuyi mountains of China. Another name for Pine Smoked Black is “Zheng Shan Xiao Zhong,” as the tea uses a small tea variety from Zheng Mountain. In the earlier part of the 19th century, many black and oolong teas developed a somewhat woody, smoked flavor due to the use of wood-fired woks in processing. The flavor profile gained popularity, and smoked tea began to be produced intentionally.
In the manufacture of Lapsang Souchong, the initial processing techniques are similar to other Chinese black teas. The leaf is allowed to achieve a lengthy oxidation before roasting, rolling, and drying. However, in subsequent steps, the leaves are transferred to a smokehouse where they are hung from bamboo baskets above smoking pine wood. This is a process that is quite time consuming; it takes several hours and needs constant attention.
Lapsang Souchong complements well with slightly spicy and oily foods.
