About Assam Sona:
Assam Sona (Gold) tips is a prized purchase for us this season. It is treasured because it can only be made from the P-126 (Panetola-126) clonal varietal grown in a handful of gardens. This varietal is notable for its large, fat buds and small leaf which gives a tippy style of finished tea. The color gold emerges in the oxidation stage, when the sap from the rolled leaf dries. Only the P-126 is known to produce the necessary amount of sap for the gold color to emerge.
Ingredients: Black tea leaves.
Warm, sweet aroma similar to brown turbinado sugar with woody earthiness.
Every tea is different and can be brewed in different ways. The chart below is not a hard-and-fast guide for brewing this tea, but rather a place to get started. Steeping time may vary based on your personal taste or on how many infusions have already been done. Experiment with the brewing of your tea to discover its unique character.
