Introduction: Jin Bi Luo is a rare gold tea from Ningde, Fujian province, China. Made with only the newly sprouted leaf buds which are gold in color as a result of using a distinct plant varietal and a special leaf withering technique. Fujian, Yunnan in China and Assam in India are famous regions for producing gold teas.

Flavor Profile: Very smooth, similar to honey texture. Consistent, flat taste of roasted yams with hints of rose hips.

Chinese black teas can range dramatically in flavor and aroma but generally produce very full bodied, strong infusions. A water temperature of 180 to 200 F is sufficient to bring the rich character of the leaf. Some recommend water at a full, rolling boil, but in our opinion boiling reduces the oxygen content in good water and gives the tea a "flatter" taste as opposed to a more "lively" taste from slightly cooler water.
